New restaurant opens at historic coliseum building

The Historic Coliseum Building is thrilled to welcome SQUARE ROOTS, a NEW restaurant concept that is also doing good work in the community.

Founder and Community Director Jared Brewington brings together more than 25 years of work across restaurants, entrepreneurship, real estate development, youth mentorship, and community investment.

Square Roots brings those experiences together in one place.

For Jared, the restaurant represents a long term commitment to what hospitality can make possible for people, careers, and community.

Along with General Manager Xavier Hayden, this team is reigniting the dining space on the first floor of the Coliseum Building. Square Roots uses the restaurant as a place for professional learning, mentorship, and career development. Through a paid 22 week hospitality residency, young adults ages 18 to 24 train alongside experienced culinary and restaurant professionals while earning wages, developing skills, gaining certifications, and building relationships that can lead to future employment.

The residency is part of a broader social enterprise model that connects dining, workforce development, and community investment. Each supports the others, creating a restaurant that can serve its guests while opening meaningful pathways into hospitality careers.
